    Make it Green for St. Patrick’s Day: ECO Shrimp with Pesto

    This recipe is not Irish by any means, but it's certainly pretty green. Plus, it’s definitely delicious, and very easy to do.  So, St. Patrick’s day or not, this is an all time recipe!

     

    Whether you serve the dish with pasta, rice or bread, there is no doubt that you will have to fight for seconds. So make sure to cook some extra ECO Shrimp!

     

     

    Start by making a pesto. You can go with the traditional Italian recipe, by mixing a bunch of fresh basil, pine nuts, pecorino, pepper, olive oil and minced garlic.

     

    Or you can make it with fresh parsley, garlic, salt, pepper, white wine and olive oil.

     

    For the photos, we used the parsley pesto. Here what you will need: 

    Pesto:

    1 bunch of parsley

    3 cloves garlic, minced

    Olive oil

    ¼ cup white wine

    salt and pepper

     

    1 lb of large shrimp – shells on, heads-on.

     

     

    Combine all the pesto ingredients in a blender/food processor or crush them by hand with a pestle and mortar until smooth.  Add the fresh pesto to the shrimp, and let it marinate for 5 minutes at room temperature.

     

     

    Preheat the oven to 500 degrees. Place all the ingredients in a oven dish and bake until the shrimps are pink –  5 to 6 minutes.  You can also grill the shrimp over medium-high heat, a few minutes per side
