Garlic-Lime Shrimp is sunny, fun, light, and perfect to gather friends around the table. You can combine them with almost everything, from spaghetti, noodles, salad, to a loaf of bread. And it is the easiest thing to cook.
This dish is best made with heads-on/shells-on shrimp to keep its flavor and meat moist.
1 lb. medium heads-on ECO shrimp
6-8 cloves garlic, thinly sliced (you can use elephant garlic for a milder flavor)
pepper (or red pepper flakes for a bit of kick)
In a large skillet, sautée the shrimp, garlic, salt, pepper (or cayenne) in 4 tbsp. of extra-virgin olive oil.
Sear shrimp, shaking skillet over heat frequently, until the shrimp turn pink and their shells are golden and charred in places, 1–1 1⁄2 minutes per side.
Squeeze 1 lemon over shrimp, then serve, sopping up the pan juices with the shrimp and pieces of country bread.
