Tomates-Crevettes (or tomatoes filled with shrimp) is a Belgian classic. It's easy, fresh, and delicious. The perfect thing to bring to a summer table!
You can make the mayonnaise from scratch, or simply use a store-bought you like. Part of the Mayonnaise can also be replaced with yogurt. In this case just add a little mustard and lemon to get a better flavor.
Cut the heads of the tomatoes, and scoop them out of their flesh. Turn the tomates upside down in a paper towel, to drain the water
Cook the shrimp, heads on/shells on, very quickly in hot water and salt. Take out the shrimp when they turn pink and place them in ice to stop the cooking process. Take out the shells and heads (you can also reserve the water, reduce it, and use in other dishes)
In a bowl, mix the shrimp with the Mayo and the tarragon
Add salt and pepper
Fill your tomatoes with the mix and finish with a touch of salt and pepper.
